Javea
has many restaurants where one can try international cuisine as well
as local dishes. Since Javea is a coastal town, fish and shellfish dishes prevail. Try the delicious fish stews "cruet de peix" and "suc roig", or fried dishes such as "peix fregit". Also typical are fresh salted anchovies, tuna and the tasty "borreta de melva" as well as Xàbia´s delicacy "bogamarins" (sea urchins). Rice is a main ingredient of many dishes, such as "arròs al forn" (oven-baked rice), "arròs amb costra"(covered with a crust of omelette), "arròs amb fesols i naps"(rice with beans and turnips),"arròs a la marinera"(literally, fixherman´s rice), or "arròs a banda"(rice with fish stock), "arròs amb bledes"(rice with beet) and, of course, the traditional Paella. Also typical of Xàbia are "cocas", small pizza-like pastries with pepper and tomato, or oil and anchovies, and "empanadillas", pasties filled with vegetables such as peas or spinach, or with pepper, tomato, tuna and boiled egg, "putxero", a hearty stew with local vegetables and meat balls, snails, salted fish and sausages. Two basic elements of any dish are garlic and olive oil, essential ingredients of a healthy Mediterranean diet. United they form "All i oli", garlic mayonnaise which brings its intense flavour to a multitude of dishes.

Typical Recipies of Javea If we fix our attention on our dishes, we could see a great variety in its composition, it follows from this, that we've got "a balanced diet based always on the local produce". Because the nourishing rituals of any community really are closely linked to culture, folklore, popular beliefs, religion and style of life. Sometimes ( nowadays) it's surprising to find restaurants which in order to be innovators they use the dishes we've been eating for so many years, and trying to be modern we've stopped making them. We can find on the menus of luxury ( high standing) restaurants dishes like " arròs amb fessols i naps" ,as well as different stuffed vegetables, sweets and wines like "Mistela" that we knew form old times. Dishes that we hope we won't forget again. Here you can find recipes which could or could not be well known for a lot of people, nevertheless it will be a sort of resumé of the way to nourish ourselves through th centuries. We believe it will be useful not only to learn to cook some dishes but to think about the cultural importance that nowadays has everything related to gastronomy and more when we talk about ours own. |
